Microwave Christmas Pudding Recipe

A Christmas Pudding that isn't heavy & stodgy, but light & really yummy - AND cooks quickly in the microwave? I don't normally rave about my own cooking, but this one is a sure-fire winner. It comes out much lighter in colour than a traditional one and it's quick, easy and delicious.

Ingredients

50g breadcrumbs
100g plain flour
2 tsp mixed spice
150g sultanas
150g dried fruits
50g chopped almonds
2 grated apples
rind & juice of one orange and one lemon
100g butter
100g soft brown sugar
2 beaten eggs
6 tbsp brandy
4tbsp milk
2 tbsp black treacle

Method

Mix all the ingredients together.

Line a microwave-safe bowl with cling film
Spoon in the ingredients
Cover the top of the bowl with cling film and pierce several times
Cook for 6 minutes on high heat
Rest for 3 minutes
Cook for a further 5 minutes
Rest for 20 minutes before serving...and voila!
(feel free to douse with brandy & light..!)
